Toddler Approved Homemade Granola
Breakfast can be a little crazy in our house, and having things on hand to spruce up a yogurt or throw in my bag for a snack has made life with three boys a little easier. One of my favorite staples to have in our pantry is my mom's homemade granola. Prep is only 10 minutes and after 45 more in the oven, you'll be set for a week or two (depending on who can reach the canister).
- 1 Cup Raw Sunflower Seeds
- 1 Cup Raw Pumpkin Seeds
- 3.5 Cups Rolled Oats
- 1/2 Cup Coconut Chips
- 1 Cup Chopped Pecans
- 1/2 Cup Olive Oil
- 1/2 Cup Light Brown Sugar
- 3/4 Cup Maple Syrup
- Sea Salt
Breastfeeding Variation: If using while breastfeeding or making for a new mother, try to add in 2 Tablespoons of Brewer's Yeast and 3 tbsp flaxseed meal
Whisk the brown sugar, oil, syrup, and a pinch of course salt in a dish. Place remaining ingredients in a large bowl and toss in the syrup mixture slowly until combined. Place on a baking sheet with a lip to prevent overflow and cook at 300 degrees for 45 minutes, tossing every 15 to keep even.
We usually throw ours into a few tiny cups for on the go, and leave the rest in a canister in the kitchen. The breastfeeding option would be perfect to jar and add to a basket of goodies for a new mom. Happy Munching!
